COCONUT PANDAN SALAD (Buko Pandan Salad)


Coconut meat, shredded
Coconut juice
Pandan leaves
gelatin, green
Coconut milk (optional)
Muscovado sugar (optional)


Cook gelatin as per instructions together with pandan leaves. When it sets, cut into small bite-size squares. Mix with coconut juice, coconut meat and sugar. Chill and serve.
